These little storefronts pepper the streets and back alleys of every city and village in Japan.  These are the little family-owned holes in the wall that feature recipes from their ancestors. These are my favorite places to grab a bowl of noodles or something off the grill, while exploring that country.  The lantern hanging to the left promotes Yaki-tori, though the menu is wide-reaching with delicacies native to the area.  Menus throughout Japan will vary depending on region and you can drill down from town to town, store to store.  Sauces and styles differ greatly across the landscape with dishes in Hiroshima, for instance being unrecognizable from that of the same dish in Tokyo.  I love visiting Japan where ancient traditions blend perfectly with the most modern technologies.
